Development of composition to enhance protein bioaccessibility




  • Research goal: Development of protein composition to enhance bioaccessibility and intestinal transport of branched-chain amino acids (BCAA)
  • Experiments

- Investigating the effect of protein mixtures with or without excipient additives (soy lecithin, zinc, and methylsulfonylmethane) on bioaccessibility and intestinal transport

  by using in vitro digestion model system coupled with Caco-2 cell line

- Simultaneous analysis of BCAA in protein powders and digestive fluids by LC-ESI-MS/MSn
